I love avocado. I love it for its buttery and creamy texture, for its beautiful faded lime green colour, and for all of the health benefits that it gives. In case you don’t already know, avocado is the only fruit that provides a substantial amount of monounsaturated fat (the healthy kind). It is naturally nutrient-dense and contains nearly 20 vitamins and minerals. For example, beta-sitosterol found in avocado is said to help in maintaining healthy cholesterol levels; the high levels of folate is great for reducing cancer risks and depression; and the richness in fiber also helps to regulate the immune system and inflammation. Besides having the fruit on its own with salt and pepper, or sriracha, or with maple syrup (that’s how I love to eat my avocado); here are a few easy recipes that I love to eat my avocado with!
1. Avocado with Toast
Simplest, yet the most delicious way to have my breakfast. On days when my avocado is too ripe, I’ll spread it on the bread instead of slicing it. I sometimes top it up with a sunny side up egg too! 🍳
2. Baked Egg in Avocado
Speaking of eggs, baked egg in avocado is also a love. Although it is more time consuming, it is a good way to spice up your breakfast, especially with the Sriracha dressing on top! 😋 One concern for this recipe is having to make sure the egg is cooked, but not overcooked – that requires a lot of patience and a great estimation!
3. Avocado, Quinoa and Smoked Tofu Salad
This is my go-to salad in a jar recipe for school. Mix cooked quinoa, cubed avocado and cubed Soyganic original flavour smoked tofu in a container and dress it up with a zest of lemon juice, salt and pepper (you can add a little bit of olive oil too!). The flavour of the smoked tofu really aromatize the salad without lots of dressing.
4. Sriracha Lime Orzo Salad
I tried this pasta salad from my friend once and I fell in love with it ever since! The Sriracha lime dressing is really refreshing and flavourful. This is a very similar recipe to what she used, except that she skipped the sesame oil and cilantro because she doesn’t really like them.
5. Creamy Avocado Spinach Pasta
Forget about the old school tomato sauce, freshen up your pasta taste buds with this creamy avocado spinach pasta! I was really excited when I found this recipe on Pinterest. The green sauce made me feel as though I am eating the healthiest pasta meal in the world. Although, I added pan-fried chicken breast onto my plate because I’m carnivorous like that. LOL
6. Avocado + Yogurt + Cereal
Yeap! Avocado with yogurt sounds weird, but I can promise you that it is a great combination! The crunchiness of the breakfast cereal blends in perfectly with the soft, creamy combination of the yogurt and avocado. My friend Vivian made this up with her favourite Trader Joe’s french vanilla yogurt and coconut cranberry granola. I’m considering outsourcing my granola from Trader Joe’s because it is still by far, the best granola to top this avocado + yogurt combo.
7. Avocado with soy milk smoothie
Slice an avocado into half, blend it with a cup of soy milk – VOILA! I personally love using original soy milk as it adds sweetness to my smoothie without needing to add other sweeteners. You can definitely play around with the recipe with different types or amount of soy milk to get the perfect combo for yourself! 😊
8. Jus Alpukat (Indonesian Avocado Smoothie)
My very first exposure to avocado was this smoothie I tried when I traveled to Indonesia when I was little. Although this recipe with sweet condensed milk and chocolate syrup is not so healthy, it is absolutely BOMB DOT COM. Give it a try if you can find sweet condensed milk from where you are!
